Chocolate Chip Banana Bread Muffins

Have you ever gone to the store, bought a bundle of bananas with great hopes of finishing them before they turn spotty and brown, only to be left with brown bananas at the end of the week? I used to throw out these brown, overly soft and spotted bananas all the time. Even though they aren’t very good to eat alone, I discovered that these bananas are PERFECT to bake with.

I love banana bread but usually, in traditional recipes, it’s filled with tons of white sugar, oil, and all-purpose flour. Now… I’m not against any of those things, but I did want to find a way to make banana bread a little more wholesome. One day when I had brown bananas for the “umpteenth” time I thought it was time that I try my hand at making my own version of banana bread. After a few tries, I have finally perfected the recipe. I decided to make my banana bread into little banana muffins, instead of one big loaf.

I HAD to share this recipe! These chocolate chip banana muffins are moist, delicious, and a breeze to make. You can make this entire recipe using just one bowl and a spatula if you wanted to.

I found that bananas actually get sweeter as they ripen so because we use overripe bananas in this recipe we don’t have to use much sugar. If you want to make these muffins before your bananas turn spotty you may have to add more sugar for them to be sweet enough.  We also use coconut sugar instead of white sugar used in traditional banana bread.

You may be wondering why this recipe calls for applesauce. It does seem like a weird ingredient to add. Applesauce does not give this bread an apple taste at all, but it gives moisture so we don’t have to add much oil, which helps us to keep this bread lighter. Applesauce also adds a little hint of sweetness to help to sweeten the bread even more without additional sugar. That’s a win-win in my book.

I love these banana muffins, and even my husband who is not much of a dessert guy raves about them. I think you’ll love them too. Next time you’ve got some overripe bananas, instead of tossing them in the garbage, take 10 minutes and whip up these up!

Ingredients
  • Banana- ¾ cup Mashed Banana
  • Eggs- 2 Large Eggs
  • Coconut Sugar- ½ Cup
  • Avocado Oil or any flavorless oil- ¼ Cup
  • Unsweetened Applesauce-½ Cup
  • Vanilla Extract- 1 1/4 Teaspoons
  • Whole Wheat Pastry Flour- 1 1/3 Cup
  • Salt- 1/16 teaspoon
  • Ground Cinnamon- ¼ Teaspoon
  • Baking Powder- 1 ½ Teaspoons
  • Mini Chocolate Chips- 2 tablespoons
Directions
  • Step 1 In a large bowl mash bananas with the back of a fork until a puree forms (It is okay if there are a few chunks of banana).
  • Step 2 Add eggs, sugar, oil, applesauce and vanilla to banana puree and mix until combined well.
  • Step 3 In a separate bowl mix dry ingredients: flour, baking powder, salt, and cinnamon in a bowl, stir to combine.
  • Step 4 Add dry ingredients to wet and fold together until just combined. (Be careful not to over mix batter).
  • Step 5 Spray down a muffin pan with nonstick cooking spray (batter is a bit sticky, so I recommend not using liners).
  • Step 6 Add about 1/3 cup of batter to 10 muffin slots.
  • Step 7 Evenly distribute chocolate chips on top of each muffin.
  • Step 8 Place in a preheated 350-degree oven for between 15-20 minutes.
  • Step 9 After 15 minutes check to see if muffins are done by inserting a toothpick in the center of one of the muffins. When the toothpick comes out with no wet batter the muffins are done.
  • Step 10 Let cool for 10 minutes and then remove muffins to a cooling rack.
  • Step 11 Enjoy!
