Easy and Healthy Tomato-Cucumber Salad

Sometimes it’s hard to get veggies in. One goal that I have this year is to incorporate more vegetables in my meals. I find that I am more likely to eat vegetables when they are cut up and ready and I’m even more likely when they are jazzed up with a delicious sauce or dressing. One of my favorite ways to enjoy vegetables is by making my Tomato Cucumber Salad. The crisp cucumbers, with tomatoes, tossed in a tangy vinaigrette… purely perfection! It is soooo good!

Not only is this Tomato Cucumber Salad delicious, but it can be made in about 5 minutes! This has become one of my go-to side dishes. It’s quick and easy and it gets better and better the longer it sits, which makes it a great make-ahead dish. Sometimes I’ll even make a big batch on a Sunday so we have a quick and easy side dish option for lunches and dinners throughout the week. Enough of me talking about how good this salad is, here’s how to make it!

Ingredients You Will Need:

2 1/2 cups of Roma Tomatoes

2 Cups of English Cucumber (About 2 medium)

1/4 cup of Yellow Onion

1 tablespoon of Extra Virgin Olive Oil

1/4 cup of Red Wine Vinegar

1/4 teaspoon of Dried Dill Weed

1/8 teaspoon of Salt

1/16 teaspoon of Pepper

Can I substitute the Extra Virgin Olive Oil?

If you don’t use this specific oil it will change the taste of the final product, but if you are in a pinch you could substitute. If I needed to substitute the oil, I would use a flavorless oil like avocado oil.

Can I use fresh dill?

You could definitely use fresh dill. If you choose to use fresh dill, I would recommend doubling the amount that the recipe calls for.

How To Make This Cucumber-Tomato Salad:

Step 1:

To a large bowl add red wine vinegar, extra virgin olive oil, salt, pepper, and dill. Whisk well to combine and set aside.

Step 2:

Dice 1/4 cup of yellow onion. Set aside.

Step 3:

Wash, dry, and peel the cucumber. After prepping, cut each cucumber in 1-inch slices.

Step 4:

Wash and dry the tomatoes. Cut the tomatoes into wedges.

Step 5:

Add the cucumber slices, tomato wedges, and onions to the bowl with the vinaigrette you made earlier. Toss to combine!

Step 6:

Enjoy! You can serve right away or store in the refrigerator to chill.

  • Roma Tomatoes- 2 ½ Cups
  • English Cucumbers- 2 cups (about 2 medium cucumbers)
  • Yellow Onion- ¼ Cup diced
  • Dried Dill Weed- ¼ Teaspoon
  • Salt- 1/8 Teaspoon
  • Pepper- 1/16 Teaspoon
  • Extra Virgin Olive Oil- 1 Tablespoon
  • Red Wine Vinegar- ¼ Cup
  • Step 1 Add red wine vinegar, extra virgin olive oil, salt, pepper, and dill to a bowl and whisk well. Set aside.
  • Step 2 Dice onions and set aside.
  • Step 3 Wash, dry, peel, and chop the cucumber. I like to cut them into about 1-inch slices and then cut each slice in half.
  • Step 4 Wash, dry, and cut each Roma tomato into wedges. Set aside.
  • Step 5 In a large bowl combine onions, cucumber, tomatoes, and vinaigrette and toss to combine.
  • Step 6 Enjoy right away or place in the refrigerator to chill.
