Healthy Make-Ahead Turkey Bacon and Veggie Mini Frittatas

Meal prep. Meal prep. Meal prep. I feel like that term is thrown around so much, followed by lavish pictures of every meal for the week in cute little Tupperware containers. I tried this method of meal prep. Although I did enjoy having all of my meals prepped and ready for me for the week, I found myself in the kitchen ALL DAY on Sunday, with overwhelm written all over my face after a couple of hours.

I decided to stop meal prepping in that way and found something that worked better for me. I now find that doing little things like simply preparing breakfast for the week makes my week go by a lot smoother. I’m really learning that even a little bit of prep on the weekend makes a big difference when the busy week work week starts.

One of my goals this year has been to make sure to eat breakfast every morning because I find that if I don’t then I want to eat EVERYTHING come lunch time! Meal prepping my breakfasts definitely helps me to avoid that. It saves me so much time in the mornings too because I don’t have to think about what I’m going to eat. I know that I have breakfast already in the fridge waiting for me.

One breakfast that I like to prep is my turkey bacon and veggie mini frittatas. They are so delicious! These beauties are really easy to put together and only take about 10 minutes prep time, so you can make a batch of them for the week in no time. I love that they are so customizable. Usually, I like to add mushrooms, onions, bell peppers, turkey bacon, cheese, and a tiny bit of pure maple syrup to mine.

They are also really easy to freeze too. I like to freeze half at the beginning of the week so I have fresh mini frittatas all week long.

Ingredients
  • Large Eggs-12
  • Avocado Oil-1 1/2 Teaspoons
  • Mushrooms-1/2 Cup diced
  • Bell pepper-1/2 Cup diced
  • Yellow Onion-1/4 Cup diced
  • Turkey Bacon-12 strips
  • Shredded Cheddar Cheese-2/3 Cup
  • Unsweetened Almond Milk-3 Tablespoons
  • Salt-1/2 Teaspoon
  • Pepper -1/8 Teaspoon
  • Garlic powder-1/4 Teaspoon
  • Pure Maple Syrup (Optional)-1 Teaspoon
Directions
  • Step 1 Chop turkey bacon into bite-sized pieces
  • Step 2 Place oil in a small skillet and sauté turkey bacon 8 to 9 minutes over medium heat until bacon begins to crisp up slightly
  • Step 3 Take turkey bacon off the burner and stir in 1 teaspoon of maple syrup, set aside
  • Step 4 Crack 12 large eggs into a large bowl and add 1/2 teaspoon salt, 1/8 teaspoon pepper, 1/4 teaspoon garlic powder, 3 tablespoons milk, and 1/4 cup of the shredded cheese, mix well and set aside
  • Step 5 Dice bellpeppers, onions, and mushrooms
  • Step 6 Spray muffin pan well with non-stick cooking spray and evenly distribute veggies to 12 muffin cups
  • Step 7 Evenly distribute bite sized turkey bacon on top of veggies into muffin pan
  • Step 8 Evenly distribute egg mixture on top of veggies and turkey bacon (about 1/4 cup per muffin)
  • Step 9 Evenly distribute the remainder of cheese to tops of muffins
  • Step 10 Place into a 350 degree oven for 19-21 minutes
  • Step 11 Enjoy!
