Have you ever got into the rut of eating the same boring thing for lunch pretty much every day? For me, “that” lunch is, more times than not, is a plain ol turkey sandwich with cheese and yellow mustard. I’m not sure if you feel this way, but sometimes I just want something a little more interesting!
One lunch that I’ve really been loving lately is my Turkey Club Sandwich With Avocado-Herb spread. It is filled with goodness: Deli turkey, provolone cheese, tomatoes, crisp mixed greens, red onions, and roasted red peppers, then topped off with a quick homemade avocado-mayo herb spread.
I enjoy it every time I have it for lunch. It’s over the top good and super fast to put together! This is one of those lunches that will make you think that you bought it from one of those fancy sandwich shops!

Ingredients You Need:
Deli Turkey (1/3 pound)
Bread (4 slices)
1 Medium Avocado
1 Roma Tomato
1/3 cup of Roasted Red Peppers
1 1/2 cups of Mixed Greens
1/8 cup of Red Onion
2 Pieces of Provolone Cheese
3/4 teaspoon of Lemon Juice
1 tablespoon of Mayonnaise
1/2 teaspoon of Italian Seasoning
1/8 teaspoon of Salt
1/8 teaspoon of Pepper
What type of turkey should I use?
You can use pretty much any deli turkey you would like. If you can find it, though, I highly recommend honey glazed deli turkey.
What type of cheese can I use besides provolone?
I would highly suggest provolone, but you could try sliced mozzarella or Colby Jack.
What type of bread works best for this sandwich?
I like this sandwich with wheat bread, but it also works great using a white variety too.
How to Make This Sandwich:
Toast 4 slices of bread and set aside.
Slice tomatoes into 6 medium slices and set aside.
Slice about 1/8 of a cup of red onion. Set aside.
Place your avocado in a small bowl and mash well with a fork.
Stir mayo into your mashed avocado. Add salt, pepper, Italian seasoning, and lemon juice. Mix well to combine and set aside.
Spread avocado mixture evenly over two slices of bread.
On the two other pieces of bread, without the avocado spread, add mixed greens, turkey, cheese, roasted red peppers, tomato slices, and onion slices.
Top your sandwich with the slice of bread that has the avocado spread and enjoy!
Healthy Turkey Club Sandwich With Homemade Avocado-Herb Spread
- Wheat Bread- 4 Slices
- Deli Turkey- 1/3 lb
- Roasted Red peppers- 1/3 Cup
- Mixed greens- 1 1/2 Cups
- Roma Tomato- 1
- Sliced Red Onion- 1/8 Cup
- Provolone- 2 Pieces
- Avocado- 1/2 Cup (About 1 medium avocado)
- Lemon Juice- 3/4 Teaspoon
- Mayo- 1 Tablespoon
- Italian Seasoning- 1/2 Teaspoon
- Salt- 1/8 Teaspoon
- Pepper- 1/8 Teaspoon
- Step 1 Toast bread, set aside
- Step 2 Slice tomato into about 6 medium slices, set aside
- Step 3 In a small bowl mash avocado well, then stir in mayo, salt, pepper, Italian seasoning and lemon juice. Mix well and set aside
- Step 4 Evenly spread avocado mixture over two slices of bread
- Step 5 On the other two slices of bread without avocado mixture add mixed greens, turkey, cheese, roasted red pepper, tomato, and onion slices
- Step 6 Top with bread with avocado mixture
- Step 7 Enjoy!
