Homemade Chocolate Peanut Butter Cups

Ever had a chocolate peanut butter cup? When I was a kid we always had them at home because let’s just say my dad was a super fan of them. I mean what’s not to love? The delicious chocolate coating on the outside with an amazing peanut butter filling inside! JUST. SO. GOOD.

The other day, out of nowhere, I got an itch to have a peanut butter cup. I decided that I wanted to create my own version of them at home. When I did they turned out great.

I wanted to share the recipe with you because if you are a fan of chocolate peanut butter cups, you’re going to love these!

For the peanut butter filling, we use natural peanut butter and coconut sugar instead of regular peanut butter and white sugar. I prefer to use natural peanut butter because the only ingredient is peanuts (and sometimes salt). Other peanut butters on the shelves are loaded with unnecessary additives, sugar, and oil, which I prefer to avoid if I can.

These peanut butter cups are so easy to make. They only take about 20 minutes to put together and then about one hour in the freezer to completely set.

Give these a try, in my opinion, they are so much better than the store-bought version.

What You Need For This Recipe:

A mini muffin tin

Mini muffin liners

1 1/4 cup of semi-sweet chocolate chips

1/2 cup of natural peanut butter

1 tablespoon of coconut sugar

1 1/2 teaspoons of pure vanilla extract

1 1/2 teaspoons of avocado oil (or any other flavorless oil)

A pinch of salt (if your peanut butter does not already have salt in it)

 

Step 1:

Line your cupcake tin with muffin liners.

 

Step 2: 

Melt 3/4 cup of your chocolate with 1 teaspoon of avocado oil.

 

Step 3: 

Immediately after your chocolate is melted, distribute about 2 teaspoons of the chocolate to each muffin cup. With the back of a spoon work the chocolate up the sides of each muffin cup.

 

Step 4:

Put your muffin pan in the freezer for 10 minutes to allow the chocolate to set.

 

Step 5:

While chocolate is setting, microwave your peanut butter for 30 seconds to loosen it up a bit. After microwaving your peanut butter, add coconut sugar, vanilla extract, and a pinch of salt (omit the salt if your peanut butter already has salt in it). Mix all of the ingredients together well.

 

Step 6:

After 10 minutes take your muffin tray out of the freezer and evenly distribute the peanut butter mixture to each muffin cup. After distributing the peanut butter, put your muffin tray back in the freezer while you melt the remaining chocolate.

 

Step 7:

Melt 1/2 cup of chocolate chips with 1/2 teaspoon of oil.

 

Step 8:

As soon as your chocolate is melted take your muffin tin out of the freezer. Evenly divide the melted chocolate between each muffin cup. Using the back of a spoon evenly spread the chocolate to cover the peanut butter mixture.

 

Step 9:

Return your muffin tin to the freezer for at least an hour to allow the chocolate to set completely.

  • Step 2 Melt ¾ cup of chocolate with 1 teaspoon avocado oil
  • Step 3 As soon as the chocolate is melted distribute about 2 teaspoons of chocolate to each muffin cup
  • Step 4 Put muffin pan in the freezer for 10 minutes to allow chocolate to set
  • Step 5 While chocolate is setting, microwave peanut butter for 30 seconds to loosen it up a bit then add coconut sugar, vanilla extract, and a pinch of salt ( if your peanut butter doesn’t already have salt). Mix well.
  • Step 6 After 10 minutes take your muffin pan out of the freezer and evenly distribute the peanut butter mixture to each muffin cup and then place in the freezer while you melt your remaining chocolate
  • Step 7 Melt ½ cup chocolate chips with ½ teaspoon avocado oil
  • Step 8 As soon as chocolate is melted, take the muffin pan out of the freezer and evenly distribute the chocolate to each muffin cup
  • Step 9 Return the muffin pan to the freezer and allow to set for 1 hour.
  • Step 10 Enjoy!
