Quick and Easy Sheet Pan Chicken Fajitas

Ever had one of those days? Long day at work. Exhausted. Ready to unwind, only to get home and realize that you have no idea what you’re going to have for dinner? Let’s just say I’ve been there a time or two. I’ve got something that will help you out on those days when you have a seemingly empty fridge, no creativity, and want a healthy dinner on the table quick and painlessly. They are my sheet pan fajitas. Not only are these fajitas quick and easy, but they use very simple ingredients.

I feel like half the battle of living a healthy lifestyle is having meals that are not only healthy but easy to prepare too. These sheet pan fajitas definitely fit the bill. The whole meal is cooked under the broiler in just one pan. I don’t know about you, but I like it when I can get a whole dinner cooked in one pan. I’m a fan of less dishes, so that’s a bonus in my book!

These come together very quickly. They only take about 10 minutes of prep time and 10 minutes under the broiler. I love this dinner on weeknights because it’s just so easy to make. You can use flour or corn tortillas, both work great. I like to serve these fajitas with a simple sauce on top.  It is creamy and has just a hint of lime, that pairs really well with the perfectly seasoned chicken, peppers, and onions. It truly takes these fajitas over the top!

  • Chicken Ingredients:
  • 1. 1 1/2 lb of Chicken
  • 2. Chili Powder- 1/2 Teaspoon
  • 3. Onion Powder- 1/4 Teaspoon
  • 4. Cumin- 2 1/4 Teaspoons
  • 5. Oregano- 1/2 Teaspoon
  • 6. Paprika- 1/2 Teaspoon
  • 7. Garlic Powder- 1/2 Teaspoon
  • 8. Salt- 1/4 Teaspoon
  • 9. Pepper- 1/4 Teaspoon
  • 10. Avocado oil- 1 Tablespoon
  • Vegetable Ingredients:
  • 1. 1 Large Red Pepper
  • 2. 1 Large Green Pepper
  • 3. 1 Medium Onion
  • 4. Avocado Oil- 1 Tablespoon
  • 5. Salt- 1/4 Teaspoon
  • 6. Pepper-1/8 Teaspoon
  • Fajita Sauce Ingredients:
  • 1. Sour Cream- 3 Tablespoons
  • 2. Plain Greek Yogurt- 3 Tablespoons
  • 3. Cayenne- 1/8 Teaspoon
  • 4. Salt- 1/8 Teaspoon
  • 5. Pepper- 1/16 Teaspoon
  • 6. Lime juice- 1 1/2 Teaspoons of freshly squeezed lime juice
  • 7. Water- 1/2 Teaspoon
  • Additional Ingredients:
  • 10 Tortillas (Flour or Corn)
  • Non-stick Cooking Spray
  • Step 1 Cut chicken breasts into thin strips (about ¼ of an inch thick)
  • Step 2 In a large bowl season chicken with chili powder, onion powder, cumin, oregano, paprika, garlic powder, salt, and pepper
  • Step 3 Add oil and toss to combine oil and seasonings on chicken
  • Step 4 Once oil and seasonings has been mixed well, cover chicken with foil and set aside
  • Step 5 While chicken is marinating make your sauce by mixing: sour cream, greek yogurt, cayenne, salt, freshly squeezed lime juice, and water in a small bowl. Mix well then cover and set aside
  • Step 6 Cut bell peppers and onions into strips (about 1 inch thick)
  • Step 7 Place bell peppers and onions in a bowl with oil, salt, and pepper and mix well to combine, set aside
  • Step 8 Spray a sheet pan with non-stick cooking spray to be sure nothing sticks then place sliced bell peppers and onions onto the pan
  • Step 9 Put pan with the bell peppers and onions under the broiler for: 4 -5 minutes (flip the veggies after 2 minutes to prevent them from burning)
  • Step 10 After 4-5 minutes nestle chicken in between the bell peppers and onions and place the sheet pan back under the broiler for 4 minutes
  • Step 11 After 4 minutes flip each piece of chicken and place back under the broiler for an additional 1-2 minutes, until chicken is fully cooked through
  • Step 12 Remove chicken, bell peppers, and onions from the oven
  • Step 13 Top each tortilla with chicken, bell peppers, onions, and fajita sauce
  • Step 14 Enjoy!
  • Step 15 ***Note: Both vegetable and chicken cooking times may vary slightly depending on how big or small you actually sliced everything
