What I Eat In A Day As An Intuitive Eater #8

Happy Wednesday!

It’s been a little while since I’ve written one of these posts, so I thought it was time to get another one up on the blog. All of the meals that I made are quick and easy and can be prepped ahead of time, if needed. Hopefully, you’ll get some ideas for simple meals that you can cook at home.

 

What I Eat In A Day As An Intuitive Eater #8 

Morning Coffee:

About half an hour after drinking a large mason jar full of lemon water I had a cup of coffee. I made my coffee the same way as usual, with my homemade creamer and agave.

Prebreakfast:

Before breakfast, I had 2 scoops of collagen mixed in water.

Breakfast:

For breakfast, I had a big bowl of oatmeal. I used the same oatmeal base as my Creamy Blueberry Oatmeal. I topped the oatmeal with stewed berries and almond butter, instead of blueberries, walnuts, and hemp hearts. I’ve been loving this particular oatmeal so much because it tastes so good and is really filling.

Before coming up with this recipe, I never ate oatmeal much for breakfast, because I would get hungry SO fast after eating it, but this oatmeal is perfect. I’ve been making it using different toppings, and it’s been my go-to breakfast for a couple of weeks now. The berry mix had blueberries, raspberries, cranberries, and strawberries.

Lunch:

For lunch, I had some teriyaki tofu, with rice and spinach. If you’ve never had tofu, texture is everything! I’ve never had tofu at a restaurant that was good. The texture always seems to be off so I don’t order it when I am out anymore, but I like having it at home. I tried making tofu so many times before I actually came up with a recipe and a method for cooking it that really works.

For the tofu, I seasoned it with salt, pepper, garlic powder, and onion powder. I tossed it in teriyaki sauce and then baked it in the oven until it was really crispy. On the stovetop, I warmed up some brown rice, added spinach, soy sauce, and a small squeeze of agave. This was so good!

Snack:

For a snack, I had a pack of roasted seaweed. It may sound like such a weird thing to eat, I know, but it’s really good. They are crunchy and have a pop of salt to them. Both my husband and I have been really liking them lately. I typically buy these packs from Costco, because they are much cheaper, but I’ve seen other brands at regular grocery stores too. If you’ve never tried roasted seaweed, you have to try it!

Dessert:

A little while after I had that seaweed snack, I wanted something sweet. I baked a red velvet cake over the weekend and froze about half of it. Because it’s just the two of us, we never get through a full-sized dessert. What I will typically do, is freeze most of it and then when we want something sweet we have it in the freezer ready to go. It’s great because we don’t waste any of it, nor do we feel like we have to eat the whole thing, just to avoid wasting it.

Dinner:

When it was time for dinner, we decided to have personal pizzas. All I did was put a little pizza sauce on naan bread with cheese and turkey pepperoni. We used the naan bread that I showed in my recent Costco haul.

Normally when we make naan bread pizzas, I make my own pizza sauce and jazz them up with veggies. We typically make them in a very similar way to my original Pita Pizza recipe. On this night, though, I was really looking for a super quick dinner, so we stuck to pepperoni and cheese. I also used a store-bought pizza sauce. It was quick and easy… just what I was looking for!

When I finished my pizza I was still a little hungry. I decided to have some leftover, crab and corn chowder.
